点评:This is one of the newest distilleries in the region and the first whiskies distilled at The Cairn are expected to be available in 2032. As such, you can’t taste the actual product from this new distillery, but they do offer a tasting of two malt whiskies that has been blended to match the anticipated qualities and flavours of the whiskies currently being created.
This was our first distillery tour and was a very good introduction to the process of producing whisky, and potentially the future of whisky production, with computers monitoring all processes. The production floor with its mash tun, fermentation vessels and stills was clinically clean, all shining metal with the copper stills at the end of the floor. The distillery overlooks the Spey river and the views from the production floor are outstanding, so whilst the building itself seems somewhat out of place, the mix of modern design and age old brewing methods seems to marry in this unusual distillery.
