点评:I visited Sinnos formaggi in January, although it was their "low season," Samuel and Manuela hosted me with such care and attention. The caseificio is in a beautiful rustic courtyard that they have beautifully restored into their cheesemaking and tasting/hosting space. Being a very small production, you get to see how they make all of their cheeses and taste all of them. Incredible hosts, Manuela and Samuel make you feel at home and are very knowledgable in answering any and all questions about cheesemaking, shepherding, and larger sardinian culture. They are located in the charming town of Gergei where they also have a bnb cultural project called Domu Antiga. Sinnos is a place you must visit in Sardinia, the cheese is spectacular and the kindness of Samuel and Manuela shows the beauty and heart of Sardinian hospitality.
