点评:A memorable way to spend a rainy morning in Thalpe, near Galle. We were joined by a young German couple before our host, Dinesha, guided us around a local market where we selected beautiful fresh vegetables, tuna and large prawns. We returned by tuk-tuk to Dinesha’s home secreted away amongst swaying palms and dense vegetation, where her husband was making a refreshing lime juice for us.
We set to work in their simple outdoor kitchen preparing the fish and vegetables that would go into 10 dishes (if I include the poppadoms!). We made tuna abulthial, garlic prawns, beetroot curry, cauliflower curry, aubergine pickle, dahl, potato curry, red rice, and tomato, cucumber & onion salad. We got to chop, stir and listen to the insightful guidance from Dinesha on how to blend the range of spices that went into each dish. The outcome? The chance to savour the most beautiful meal we’ve had in our time in Sri Lanka. All of us had double helpings. I think our German friends’ driver went back for thirds!
After lunch our offer to do the washing up was declined (thankfully) and we left with copies of the recipes via WhatsApp as well as a simple cookbook written by Dinesha’s mum, called Mamas Cooking Book. Mama and her family had previously owned and run a restaurant in Galle Fort, where Dinesha learned her extraordinary skills - both in cooking and for guiding her guests simply and clearly.
