The rice as many things are cooked over firewood like back in our ancestor days. That is what gives that special smoked touch to their food. I had to hold the pork and asked for a second plate of arroz con gandules (yes it was that good). Youre not going to get that flavor on a range top, the banana leaf is an addon component to the process, so please, dont kid yourself. This is my second time here and I will be coming back. While others complain about aesthetics that is dirty amd what not. Have you eaten in India? Afghanistan? Indonesia? Vietnam? Egypt? Exploring is what life is about, roughing it at times of lunch or dinner. If you are a princess or think like a spoiled prince than stay in a fancy hotel in San Juan, and forget the Airbnb, because you will be complaining about that too (you bag of conplaint), pay San Juan prices and let the little mom and pop businesses survive - no one knows with Puerto Rican thieving bastard politicians how they stick it to restaurant owners. If the taxes were affordable every mom and pop would have a aesthetical appealing storefront business. They are doing the best they can just to survive.
