点评:Fine dining is elegantly and serenely proffered in a minimalist modern space hovering above Sapporo at the 1972 Olymics ski jump stadium. Unlike most restaurants tables are spaced very far apart, emphasizing the tranquility while assuring conversations are not overheard. Staff has been impeccably trained even by the high standards of Japanese service. We ordered the fixed menu and were offered a delightful combination of French fare with a strong Japanese--even Hokkaido where ingredients were sourced--basis of painstaking preparation. Petite portions of aesthetic yet flavorful compositions characterized each dish. Foods are seasonal and also based on fresh daily availability. Highlights for me were a croquet appetizer, a beef/asparagus/radish main, a gravity defying pouff in a glass for dessert. The soundtrack was light classical that suited the ambience. The interior design was as appropriate to the setting as it was timeless in its modernity. In US currency it cost around $56 total per person or less than 1/3 or 1/4 what such a meal would have cost in California.
