I’ve been on a Carbonara quest across Liverpool, and Amalia on Campbell Square finally delivered. The sauce wasn’t stark white—hallelujah—but silky and emulsified, clinging beautifully to each strand of pasta and bursting with real flavor rather than drowning in cream.
Service was top-notch. Jurgitalitu, the Lithuanian general manager, cheerfully arranged for Chef Robert to prepare a classic Spaghetti Carbonara on request—a bonus for diners seeking authenticity.
Portion size and temperature hit the mark, and the £15.95 daytime lunch deal (with a drink) offers excellent value. I docked only half a star because this version uses pancetta and Parmesan instead of guanciale and Pecorino, but it still stands out as one of the best Carbonaras in town. Highly recommend asking for the classic preparation at Amalia.
